Spiced Chickpea and Tomato Wrap

Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 large tomato, diced
- ¼ cup red onion, diced
- ¼ cup cilantro, chopped
- 1 avocado, diced
- 1 jalapeno pepper, seeded and diced
- 2 tbsp lemon juice
- 1 tsp cumin powder
- ½ tsp paprika
- ¼ tsp salt
- ¼ tsp black pepper
- 4 large wraps or tortillas
- 4 tbsp hummus or tahini sauce
Instructions:
- In a large bowl, combine the chickpeas, tomato, red onion, cilantro, avocado, jalapeno pepper, lemon juice, cumin powder, paprika, salt, and black pepper.
- Warm the wraps or tortillas in the microwave or on a grill. Spread a tablespoon of hummus or tahini sauce on each wrap.
- Spoon the chickpea mixture onto the center of each wrap, leaving a small border around the edges.
- Fold the wrap's sides and then roll them up tightly to form a burrito. Serve immediately and enjoy!
