Spiced Chickpea and Tomato Wrap

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 large tomato, diced
  • ¼ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 avocado, diced
  • 1 jalapeno pepper, seeded and diced
  • 2 tbsp lemon juice
  • 1 tsp cumin powder
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 4 large wraps or tortillas
  • 4 tbsp hummus or tahini sauce

Instructions:

  1. In a large bowl, combine the chickpeas, tomato, red onion, cilantro, avocado, jalapeno pepper, lemon juice, cumin powder, paprika, salt, and black pepper.
  2. Warm the wraps or tortillas in the microwave or on a grill. Spread a tablespoon of hummus or tahini sauce on each wrap.
  3. Spoon the chickpea mixture onto the center of each wrap, leaving a small border around the edges.
  4. Fold the wrap's sides and then roll them up tightly to form a burrito. Serve immediately and enjoy!
