Chicken and Vegetable Yakitori Skewers

Juicy pieces of chicken and crisp, colorful veggies come together in this classic Japanese dish. Threaded onto skewers and grilled to perfection, these yakitori skewers are bursting with savory and slightly sweet flavors. Perfect for a quick and healthy dinner meal for the whole family, these skewers are sure to be a hit with family and friends.

Ingredients:

  • 1 lb. chicken breasts, boneless and skinless, cut into cubes
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 zucchini, sliced
  • 8-10 cherry tomatoes
  • ¼ cup soy sauce
  • 2 tbsp sake or dry white wine
  • 2 tbsp mirin
  • 2 tbsp brown sugar
  • 2 tbsp vegetable oil
  • Salt and pepper, to taste
  • 8-10 skewers

Instructions:

  1. Mix the soy sauce, sake or wine, mirin, brown sugar, vegetable oil, salt, and pepper to make a marinade.
  2. Add the chicken cubes to the marinade and let them marinate for 30 minutes to 1 hour. Soak the skewers in water for 10-15 mins to prevent them from burning during grilling.
  3. Preheat your grill to high heat. Alternate threading the chicken cubes, bell peppers, onion, zucchini, and cherry tomatoes onto the skewers.
  4. Brush the skewers with any remaining marinade. Grill the skewers for 10-12 mins, turning occasionally, or until the chicken is cooked and the vegetables are tender and charred. Serve the yakitori skewers hot with rice or noodles, if desired.
