Garlic and Herbs Roasted Potatoes

Roast Potatoes with Baking Soda are popular for making crispy and fluffy roasted potatoes. The baking soda helps break down the potatoes' surface and creates a crispy, caramelized exterior while keeping the inside soft and fluffy.

Ingredients:

  • 2 lb. potatoes, peeled and cut into large chunks
  • 2 tbsp. baking soda
  • ¼ cup olive oil
  • Salt and crushed pepper, to taste
  • Fresh herbs (optional)

Instructions: -

  1. Preheat your oven to 400F (200°C). In a stockpot, bring enough water to cover the potatoes to a boil. Add the baking soda and the potatoes. Boil the potatoes for about 5 minutes until they break down around the edges.
  2. Drain the water and put the potatoes sit for a few minutes to dry. Add the olive oil, salt, and pepper to the pot with the potatoes and toss until the potatoes are coated. Put the potatoes in a single layer and bake for about 33-35 minutes.
  3. Remove the potatoes and transfer them to a serving dish. Garnish with fresh herbs, if desired.
