Almond Cardamom Biscotti

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cardamom
  • ¼ tsp salt
  • 1 cup sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup almonds, coarsely chopped
  • Coarse sugar for sprinkling




  1. Preheat the oven to 350 ℉ (175 ° C) and line a baking sheet with parchment paper.
  2. Stir the flour, baking powder, cardamom, and salt in a larger bowl. Beat the sugar, eggs, and vanilla extract in a large bowl until light and fluffy.
  3. Stir in the flour mixture until fully incorporated, then fold the almonds. Split the dough on a lightly floured surface and roll each portion into a 12-by-2-inch log.
  4. Set the logs on the prepared baking sheet, about 4 inches apart, and sprinkle coarse sugar over them. Bake for 25 mins or until golden brown around the edges.
  5. Take it out from the oven and allow it to cool for five mins. Using a serrated knife, diagonally slice the logs into 1/2-inch thick pieces.
  6. Place the biscuit slices, cut side down, on a baking sheet and bake for 10 mins, or until they are golden and crisp. Before serving, remove from the oven and allow to cool fully.
