Chocolate Chai Spiced Cookies

Ingredients:

  • 1 and ¼ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cardamom
  • ½ tsp ground cloves
  • ½ tsp ground black pepper
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups semisweet chocolate chips

 

Instructions:

  1. Turn oven on to 375°F. Wrap parchment paper around a large baking sheet.
  2. In a medium non-stick bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, cardamom, cloves, black pepper, and salt.
  3. Using a mixer, beat the butter and sugars together in a large bowl for about 3 mins or until they are light and fluffy.
  4. After gently incorporating each egg, whisk in the vanilla extract. Slowly incorporate the dry ingredients into the butter mixture until everything is thoroughly combined.
  5. Add the chocolate chips and stir. Drop the dough on the baking sheet about 2 inches apart using a tablespoon.
  6. Bake for 12 to 15 mins or until the edges get lightly golden and the middle is set. Let cool for 5 mins on the baking sheet, then move to a wire rack to cool completely.
