Avocado and Egg Toast

Indulge in a creamy and satisfying breakfast with this Avocado and Egg Toast. This simple yet delicious dish combines the richness of ripe avocado with the protein of a perfectly cooked egg, all on top of a slice of toasted bread. The result is a quick and easy meal that is packed with flavor and nutrients. Whether you're looking for a quick breakfast on the go or a leisurely brunch, this Avocado and Egg Toast is sure to satisfy.

Ingredients:

  • 2 slices of whole-grain bread
  • 1 ripe avocado
  • Salt and pepper, to taste
  • 2 large eggs
  • 1 tbsp olive oil
  • Fresh cilantro or parsley for garnish

Instructions:

  1. Toast the bread until golden and crispy. Meanwhile, slice the avocado in half and remove the pit. Scoop the avocado flesh onto a plate and mash it with a fork. Season with salt and pepper to taste.
  2. A small nonstick pan is heated over medium heat with olive oil. Put the eggs in the pan and cook them for approximately 3 mins, until the whites are firm but the yolks are still liquid. Spread the mashed avocado on each piece of toast in a uniform layer.
  3. Top each slice of toast with a fried egg and sprinkle with additional salt and pepper to taste. Garnish with fresh cilantro or parsley and serve immediately.
