Avocado and Egg Toast

  • 2 slices of whole-grain bread
  • 1 ripe avocado
  • Salt and pepper, to taste
  • 2 large eggs
  • 1 tbsp olive oil
  • Fresh cilantro or parsley for garnish


  1. Toast the bread until golden and crispy. Meanwhile, slice the avocado in half and remove the pit. Scoop the avocado flesh onto a plate and mash it with a fork. Season with salt and pepper to taste.
  2. A small nonstick pan is heated over medium heat with olive oil. Put the eggs in the pan and cook them for approximately 3 mins, until the whites are firm but the yolks are still liquid. Spread the mashed avocado on each piece of toast in a uniform layer.
  3. Top each slice of toast with a fried egg and sprinkle with additional salt and pepper to taste. Garnish with fresh cilantro or parsley and serve immediately.
