Masala Omelette with Spinach and Tomatoes

  • 2 large eggs
  • 2 tbsp water
  • Salt and pepper, to taste
  • ¼ tsp garam masala
  • ¼ tsp. turmeric
  • ¼ tsp cumin
  • ¼ tsp coriander
  • ¼ tsp. paprika
  • ¼ tsp cayenne pepper (optional)
  • ½ tsp oil
  • ½ cup chopped fresh spinach
  • ¼ cup diced cherry tomatoes
  • 1 tbsp chopped fresh cilantro



  1. In a bowl, whisk together the eggs, water, salt, pepper, garam masala, turmeric, cumin, coriander, paprika, and cayenne pepper (if using) until well combined.
  2. Heat the oil over medium heat in a large nonstick pan. Once hot, add the spinach and cook until wilted, about 1 min.
  3. Pour the egg blend into the pan and use a spatula to spread it evenly over the spinach gently. Cook for 2-3 mins until the edges start to set.
  4. Spread the chopped tomatoes on one side of the omelet, then fold the opposite side over the tomatoes using the spatula. Continue cooking for 2-3 mins, or until the eggs are completely set, and the cheese has melted.
  5. Sprinkle the chopped cilantro over the top of the omelet and serve immediately.
