Masala Omelette with Spinach and Tomatoes

Ingredients:
- 2 large eggs
- 2 tbsp water
- Salt and pepper, to taste
- ¼ tsp garam masala
- ¼ tsp. turmeric
- ¼ tsp cumin
- ¼ tsp coriander
- ¼ tsp. paprika
- ¼ tsp cayenne pepper (optional)
- ½ tsp oil
- ½ cup chopped fresh spinach
- ¼ cup diced cherry tomatoes
- 1 tbsp chopped fresh cilantro
Instructions:
- In a bowl, whisk together the eggs, water, salt, pepper, garam masala, turmeric, cumin, coriander, paprika, and cayenne pepper (if using) until well combined.
- Heat the oil over medium heat in a large nonstick pan. Once hot, add the spinach and cook until wilted, about 1 min.
- Pour the egg blend into the pan and use a spatula to spread it evenly over the spinach gently. Cook for 2-3 mins until the edges start to set.
- Spread the chopped tomatoes on one side of the omelet, then fold the opposite side over the tomatoes using the spatula. Continue cooking for 2-3 mins, or until the eggs are completely set, and the cheese has melted.
- Sprinkle the chopped cilantro over the top of the omelet and serve immediately.
