Kimchi Soup

Get your daily dose of gut-healthy probiotics with this delicious and spicy kimchi soup. Made with tangy kimchi, savory broth, tender protein of your choice (e.g., beef, pork, tofu), and an array of colorful veggies, this soup is loaded with flavor and nutrients.

Ingredients:

  • 1 tbsp. vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp ginger, minced
  • 1 tbsp gochujang (Korean chili paste)
  • 4 cups chicken or vegetable broth
  • 1 cup kimchi, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1 cup tofu, cubed
  • 1 cup bok choy, chopped
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. The vegetable oil is heated in a pot over medium heat. Cook the onion, garlic, and ginger for approximately 5 mins or until the onion is translucent.
  2. Stir in the gochujang and continue cooking for one minute. Add the chicken or vegetable broth, kimchi, shiitake mushrooms, tofu, and bok choy.
  3. Reduce heat to low and allow to simmer for fifteen minutes.
  4. Add the soy sauce and sesame oil and mix well.
