Turkey Vegetable Kofta

Add a healthy twist to the classic Middle Eastern dish with this delicious and nutritious turkey vegetable kofta. Made with a lean turkey and veggie mixture, and infused with a blend of aromatic spices, these kofta are a flavorful and satisfying alternative to traditional beef kofta. Served with a side of fresh veggies, hummus, and pita bread, this meal is perfect for a healthy and delicious dinner, or as a crowd-pleasing party meal.

Ingredients:

  • 1 lb. ground turkey
  • 1 large carrot, grated
  • 1 large zucchini, grated
  • 1 large onion, minced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp turmeric
  • 1 tsp garam masala
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions:

  1. Mix the ground turkey, grated carrot, zucchini, minced onion, garlic, cumin, coriander, paprika, turmeric, and garam masala in a large bowl with salt and pepper.
  2. Shape the mixture into golf-sized balls, then press and flatten into patties. Heat the olive oil in a non-stick skillet over medium-high heat.
  3. Add the kofta patties to the skillet and cook for 5-7 mins on each side or until browned and cooked.
  4. Serve hot with rice or your preferred sides.
