Spiced Lentil and Vegetable Soup

Enjoy the warmth and comfort of this hearty and flavorful spiced lentil and vegetable soup. Made with a blend of wholesome veggies, tender lentils, and an aromatic blend of spices, this soup is the perfect nourishing and satisfying lunch option. Served with a side of crispy whole-grain bread or some flaky crackers, this meal is a healthy and delicious choice for any day, and especially perfect for a cozy and comforting lunch during the colder months.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • ½ tsp cayenne pepper
  • ½ tsp paprika
  • ½ tsp salt
  • 1 cup green or brown lentils, rinsed
  • 4 cups vegetable broth
  • 2 cups water
  • 1 can diced tomatoes
  • 1 zucchini, diced
  • 1 cup frozen green peas
  • Juice of 1 lemon
  • Fresh cilantro for garnish

Instructions:

  1. In a large non-stick pot, heat the olive oil over moderate heat. Add the onion and garlic, and prepare until it gets soft and translucent about 5 mins.
  2. Add the carrots and celery to the pot and cook for another 5 mins.
  3. Add the cumin, coriander, turmeric, cayenne, paprika, and salt to the pot and whisk to combine. Cook for 1-2 mins, until fragrant.
  4. Add the lentils, vegetable broth, water, and diced tomatoes to the pot. Take to a boil, then reduce heat to low and simmer for 25 mins, or until the lentils are soft.
  5. Add the zucchini and green peas to the pot, and cook for another 5 mins or until the veggies are tender.
  6. Stir in the lemon juice and adjust the seasoning to taste. Serve hot, garnished with fresh cilantro. Enjoy!
